RESOURCE® THICKEN UP®
Bread
Bread Slurry
Makes 1 serving.
Ingredients:
1 Bread Slice
1/3 cup Milk or Juice
3/4 tsp THICKENUP®
Preparation:
1. Stir liquid briskly while slowly adding THICKENUP®. Stir until dissolved.
2. Use 1/3 cup slurry per serving. Pour 1/2 of slurry into pan or serving plate.
3. Place bread in single layer on pan.
4. Prick bread several times with a fork.
5. Pour remaining slurry over bread.
6. Cover and refrigerate at 40°F. or below until bread is completely saturated, at least one hour.
7. Hold for service at internal temperature of 40°F. or below.
8. Portion 1 slice per serving.
Variation:
In place of bread, use biscuits, dinner rolls, buns, or English muffins (cut each in half and prick both sides several times with a fork).

THICKENUP® Pureed Bread Recipe 1 of 3
Pureed Biscuit
Makes 1 serving.
Ingredients:
1 Biscuit, prepared
1/3 cup Milk
1 Tbsp. THICKENUP®
Preparation:
1. Crumble biscuit into small pieces and place into a bowl.
2. Pour milk over crumbled biscuit and allow to soak for 5 minutes.
3. Place in blender or food processor and puree until smooth.
4. Add THICKENUP® and blend briefly until mixed. Scrape down sides of container to make sure all thickener is blended in.
5. Pour into a bowl. Cover and refrigerate until ready to serve.
6. For warm biscuits - place in a microwave safe container, cover and heat to desired temperature.
Note:
If using a blender to puree, additional liquid and THICKENUP® may need to be added to achieve desired consistency.
Quick Pureed Bread
Makes 1 serving.
Ingredients:
1/4 cup Bread Crumbs
1/4 cup Milk, Broth or Water
Preparation:
1. Combine bread crumbs with liquid and refrigerate for 15 minutes. Mix well and serve in place of regular bread. Heat in microwave if warm bread is desired.
Serving Suggestions:
- Use for sandwiches - Spread 1/2 of the bread mixture onto a plate. Top with pureed chicken, tuna, or egg salad. Spread remaining bread mixture on top of filling.
- Use as garlic bread - Add garlic seasoning to bread crumb mixture, heat and serve with pureed spaghetti and meat sauce.
- Use in place of a pureed dinner roll - Shape bread mixture into a ball and serve.
