Marsala Sauce


Makes 1 serving.

Ingredients:
1/4 cup Marsala Sauce, Hot
1 tsp THICKENUP®

Makes 6 servings.

Ingredients:
1 1/2 cups Marsala Sauce, Hot
2 Tbsp THICKENUP®

Makes 12 servings.

Ingredients:
3 cups Marsala Sauce, Hot
1/4 cup THICKENUP®

Makes 24 servings.

Ingredients:
1 1/2 qt. Marsala Sauce, Hot
1/2 cup + 2 Tbsp THICKENUP®

Preparation:
1. Remove amount of cooked marsala sauce needed and place in food processor.
2. Puree until smooth in texture.
3. Add THICKENUP®. Process briefly until mixed, scraping sides of bowl.
4. Pour into steamtable pan coated with vegetable cooking spray.
5. Cover tightly with aluminum foil and heat quickly (within 2 hours) to 165°F.
6. Hold hot for service at internal temperature of 140°F. or higher.
7. Portion one 2-ounce ladle per serving.

Note:
1. Measurements of liquid and THICKENUP® may be adjusted to achieve desired consistency.
